Eyeblossoms have white petals and a center that looks like an eye.
They remain closed during the day, then open with an orange glow at night, changing the atmosphere around them.
This article separates the official Minecraft mechanics for their day-and-night changes and availability from what we observed in Java Edition.

Eyeblossoms Close During the Day and Open at Night
The official Minecraft: Java Edition 1.21.4 release notes explain that Eyeblossoms have closed and open forms. They close during the day and open at night.
The Eyeblossoms we found in the Pale Garden during the day had white petals and a gray center.

At night, the center opens with an orange glow that stands out in the dark forest.

Official information says that Eyeblossoms emit particles and a sound when they change state.
Planted Eyeblossoms can also communicate that change to nearby flowers, helping them open or close.
How to Get Eyeblossoms in the Pale Garden
Eyeblossoms generate naturally in the Pale Garden.
The official notes also explain that using bone meal on grass blocks in the Pale Garden can produce them.
Wandering Traders may sell open Eyeblossoms as well.
In our OjiCra world, we found the flowers during the Pale Garden trip in Episode 36 and brought them home to plant in a greenhouse.
Observing 16 Eyeblossoms in the Greenhouse
We planted 16 Eyeblossoms inside the greenhouse.

During the day, all 16 had the white, closed appearance.

When we observed the same spot after night began, all 16 flowers had opened their orange eyes after about 30 seconds.

That timing of about 30 seconds is an observation from this world.
We are not presenting it as a fixed rule that Eyeblossoms always take 30 seconds to open.
From outside, the orange Eyeblossoms were visible through the windows, giving the greenhouse a different look from its daytime appearance.
